Felymar's Special Bibingka

T wanted Bibingka the other day so we trooped out to our all time favorite Bibingka place at Tayuman candidly called Felymar's Special Bibingka.   This is one of those hole-in-the-wall type of joint that specializes on a single dish, which in their case is Bibingka and they're really REALLY good at it.

Charred top and salted duck eggs

Bibingka is a type of rice cake found here in the Philippines which is usually sold during Christmas season made with rice flour, milk and eggs and is cooked under coals in specialized pottery lined with banana leaves.

Pre-heated coals waiting for new orders

Felymar's Special Bibingka  is located along Rizal Avenue in Tayuman, just a few steps away from the actual Tayuman LRT Station.  The joint is a bit crude but don't be fooled by their down-to-earth facade because this place serves one of the best Bibingka in the metro.

Angry coals at work

Felymar's Special Bibingka is really soft and spongy.  The taste is really good and unlike its modernly baked cousins, it has the classic aroma and essence of toasted banana leaves and smokiness of the burning charcoals.

Their Special Bibingka comes with melted cheese and salted duck eggs.  The melted cheese and charred top surface gives out the  unique smoky flavor while the salted duck egg provides a salty and savory touch to the dish.

The Perfect Bibingka

The Special Bibingka is really good but it doesn't end there. They also offer the SUPER Special Bibingka which doubles all the toppings.  And I kid you not, they also have a Bacon & Cheese Bibingka.

Dine-in or Take-out

So if you want a taste of a classic Special Bibingka, visit Felymar Special Bibingka and try it out.  The place gets really hot though due to the burning charcoals so its recommended to take your orders to go, but if you do not mind the heat, its best to eat your Bibingka on one of their wooden tables while it still hot off the coals.
