Since the Japanese tourists seems to be enjoying their bowls of ramen, T and I decided to give it a try. T ordered the regular Ramen while I went for the spicy option.
The nice lady who's manning the food cart told me that their Ramen is Soy based. They assemble the ramen in front of you and the first thing to go in was the shoyu base and spices.
After that, the noodles are blanched for a few seconds in this cool looking device. Then the pork broth is poured over the serving bowls to mix in with the base.
The noodles are then added to the broth. The bowls are a bit smaller than the usual ramen bowls used in Japanese restaurants but please note that this ramen is an affordable alternative to the high end ones.
Next to be added were the toppings which include seaweeds, chopped leeks, Narutomaki and a thin slice of roasted pork belly.
You may notice that one of them is a bit reddish in color, that's the spicy ramen I ordered. Now, I am no expert when it comes to Ramen especially when it comes to authenticity but I say that the taste of the broth is somewhat close to the ones I've tried in some casual Japanese restaurants.
Another good thing about this ramen was the noodles, which had the right amount of bite and springiness. I am pretty sure that this is not one of the best Ramen's out there but considering the price, this ramen is a pretty good value for money.

Overall, we both enjoyed our ramen and for the price of 110 pesos for two bowls of piping hot ramen, it was definitely a good deal!
I think this Ramen Cart is a perfect stopover after a night out in the streets of Malate. It is located along Adriatico St. in front of Erra's Bar & Grill about a hundred meters away from Remedios Circle.
